Organic. The vineyards are at 300m of altitude; they've been farmed organically since 1989 by the sisters Alessia & Valeria Nicolo, who own and run this small winery with their father. Soils for the Pecorino vineyards are medium-textured clay, 20 year-old, Guyot-trained vines, all manual harvest. 12-24 hrs of cold skin maceration before ferment; very gentle pressing; ferment and élevage all in large concrete tanks on lees.
