Organic, Biodynamic. 40% Malbec, 30% Syrah, 20% Cabernet Franc, 10% Merlot. Drawn from 40 year-old vines at Valerie’s home property in the AOP Côteaux du Quercy in Cahors, though the wine is declassified as Vin de France to give Courrèges greater freedom in style. The soils for these vines are marl-dominant, drawn from the limestone bedrock of an ancient lake. For ‘Zinzolin,’ the grapes are mostly Destemmed, but not crushed, in order to maintain integrity in the berries. Spontaneous ferment in small concrete tanks, sorted by parcel; moderate extraction is done via gentle punchdowns or small pump-overs. Nine to 21 days total of maceration, depending on parcel; the juice is then racked to concrete and sandstone jars for 12 months’ aging. Unfined, unfiltered.

The vineyard is from a wider plot in the elevated plateaus of the Cahors appellation, specifically located in the commune of Sauzet. The specific parcel for this wine is on a stony red clay soil, rich in iron, manganese, and mica; this is on top of Jurassic limestone bedrock. Destemmed fruit without crushing the berries, ferment in concrete tanks with gentle punchdowns/pumpovers for moderate extraction, 20-25 days of maceration and ferment. Racked to neutral oak barrels for 24 months of aging. Unfined and unfiltered. This is a profound bottle of single-vineyard Cahors, full of violet, subtle incense, cool purple tones, and energy on the palate. A marvelous proof of the beauty and sheer potential of this appellation often obscured by bulk production.

The vineyard source, one of two large parcels of a dozen hectares each that Courrèges farms, is on a thick layer of high-quality, red clay soil with Jurassic-era calcareous bedrock beneath. Destemmed fruit without crushing the berries, ferment in concrete tanks with gentle punchdowns for moderate extraction, 15-21 days of maceration and ferment. Racked to concrete tanks and sandstone jars for 12 months of aging. Unfined and unfiltered. ‘Ocrement-dit’ is a pun on ‘autrement-dit,’ a different way of saying/showing Cahors, with a pun on the ochre color of the clay. A radiant bottle of Malbec, pure, unadorned, and energetic.
